“As with so many things this book was first conceived to fill a need, which was quite simply my inability to give Byzantine pots their correct names, to describe their shapes functionally and to record their uses. The theme of the book is therefore the related problems of the utensils and containers used by the Byzantines in their daily lives, and in particular those connected with the preparation, transport and storage of food: fireproof cooking pots, transport vessels and storage containers.

These vessels differed from other everyday utensils like table and household wares in that they had a limited variety of shapes, were larger in size and were usually undecorated. Most of them were also cheaper and generally more roughly made; they were collectively styled tsoukalolagena by Ptochoprodromos and Nicetas Choniates in his popular paraphrase, and I have therefore used this term in the title of the book” writes in his Introduction professor Ch. Bakirtzis.
